Food Technology and Innovation Program Creates Out-of-Classroom Experience, Taking Students on an In-Depth Exploration of Freshwater Fish at the Nong Khai Aquarium.
On April 29, 2026, the Food Technology and Innovation Program, Faculty of Interdisciplinary Studies, Khon Kaen University, advanced its Active Learning mission by taking students enrolled in the Special Semester of Academic Year 2025 on a field study visit as part of the course Freshwater Fish for Thai Cuisine at the Nong Khai Aquarium. This initiative represents an integration of the Faculty of Interdisciplinary Studies' resources to maximize benefits for learner development.
The on-site learning visit aimed to provide students with an opportunity to explore the biodiversity of freshwater fish — a fundamental and essential ingredient in Thai culinary culture. The visit was made possible through the kind support of specialist staff at the Nong Khai Aquarium, who guided students and provided in-depth information on the species and varieties of fish, as well as the distinct physical characteristics of each type. Such knowledge is considered essential for selecting appropriate ingredients suited to various cooking techniques, and serves as a foundation for further development of food innovations that address the needs of future industries.
Beyond academic knowledge, this activity also forms part of the program's vision to cultivate students with expertise across the entire supply chain — from understanding the origins of raw ingredients to creative processing. The program aspires to equip students with the knowledge gained from this field visit to further apply in problem-solving and the creation of new innovations in their profession, ultimately serving as a driving force in elevating Thai food standards toward sustainable international recognition.
